Lobster Rolls

Ingredients
- 2 x KB’s Deli Thawed MSC WA Cooked Rock Lobster
- 1/3 cup (100g) mayonnaise
- 1/4 cup chopped chives
- 2 tsp lemon juice
- 1 tsp lemon pepper (optional)
- 1/2 cup (60g) finely chopped celery
- 10 brioche slider buns, split, lightly toasted
- 1 Lebanese cucumber, thinly sliced
- 40g baby rocket leaves
- Finely chopped chives, extra, to serve
- Lemon wedges, to serve

Step 1
Twist head off lobsters to remove. Use kitchen scissors or a large, sharp knife to cut the tails in half. Remove the meat and coarsely chop.

Step 2
Combine mayonnaise, chives, lemon juice and lemon pepper in a medium bowl. Add the celery and stir to combine. Season.

Step 3
Layer mayonnaise mixture, sliced lobster, cucumber and rocket on bun bases. Sprinkle with extra chives. Top with bun tops. Serve with lemon wedges.
